Why eat celery? It's got nothing good for you it's just a "filler." Eat something good for you like a fruit salad for breakfast and then a spinach salad for lunch. You dinner sounds good but have you thought about just becoming a vegetarian all together?
This is my guide to eating right.
1.Make sure to eat 5-9 servings of fruits and vegetables a day. I serving being about the size of an apple/pear or when measuring shoot for 1 full cup.
2.Include green leafy vegetables like spinach.
3.Always eat something orange.
4.Eat the “colors of the rainbow”-red, orange, yellow, green blue, purple.
5.Avoid fried foods, cheeses, high fat foods, sugar, and red meat (replace red meats with beans or soy).
6.Don’t overeat-Eat 6 small meals throughout the day instead of 3 large ones.
7.Eat Fiber (lots of it)!
8.Avoid caffeine.
9.Soy foods (eg. soybeans, bean curd [tofu]) contain certain B vitamins (B3, B6), vitamin E and a variety of minerals. Soy food is also rich in low fat protein. In addition, soybeans contain phytochemicals known as "phytoestrogens" (isoflavones) that help protect again hormone-linked cancers (eg. breast, ovarian and cervical cancer), osteoporosis and symptoms of menopause. Soybean food, like soy milk and tofu, can also help to reduce LDL cholesterol.
10.Don’t eat after 7 pm.
11.Eat only at the dining table (not the couch).
12.The more “raw” foods the better for you.
13.Eat healthy carbohydrates like whole grains, multi grains, oats, rice, barley, and wheat.
14.Herbs/Teas/Supplements: Green Tea, Ginger, Turmeric, Milk Thistle, Flax Seed, Omega 3 Fatty Acid, Lemon and Lime Juices.

There is no set limit as to how much cholesterol you can consume in food. Everyone is different and thus cholesterol will be handled differently. Some people on a low cholesterol diet still have cholesterol issues and it is just familial. Some people can control there level with diet and exercise alone.

I highly recommend the Paleo Diet.
The human race evolved on this healthy diet, but 5000 years ago we started agriculture and that changed our diets for the worse.
Now only 200 – 300 generations later, we are biologically almost unchanged, yet we continue to eat dairy products and wheat.
It's no wonder that average life expectancy was lower in 1900 than 5000 years before. The only reason we live longer now is because of medical advances.
Give the Paleo Diet a chance, you lose nothing by trying.
